1. Artichoke
Pest-prone artichokes need full sun, well-drained soil, cool spring weather without extreme temperatures, a lot of fertilization, and planting a few weeks before frost.
2. Celery
Celery craves a lot of space, moisture, and nutrients — without enough calcium, the crops are prone to black heart disease. Its short roots also can’t compete with weeds.
3. Cauliflower
These vegetables need weekly deep waterings to soak the dirt. Without enough water and nourishment, the crops' flavor may corrupt, and the crowns may grow small.
Their white crowns also require blanching — once they sprout, you must tie the leaves together, covering the flower in order to preserve its creamy white color.
